Ingredients

12 servings
  • 2 cupswhite rice, idli or parboiled rice
  • ½ cupurad dal
  • 1 tspfenugreek seeds
  • 1 tspsalt
  • 4 tbspvegetable oil, for the pan

Steps

  1. Rinse the rice, and separately the urad dal with the fenugreek seeds. Soak each in plenty of water for 4 to 6 hours.
  2. Grind the urad dal and fenugreek with a little of their soaking water until light and fluffy. Grind the rice with a little water until slightly grainy.
  3. Mix both batters with the salt in a large bowl. Cover and leave somewhere warm for 8 to 12 hours, until bubbly and nearly doubled.
  4. Stir the batter and thin it with water until it pours like heavy cream.
  5. Heat a flat pan over medium-high heat. Pour a ladle of batter in the middle and spread it outward in a spiral into a thin circle.
  6. Drizzle 1 teaspoon of oil around the edge and cook for 2 to 3 minutes, until the underside is golden and crisp. Fold and serve, then repeat with the rest.
